My boyfriend, Ben, and I recently starting staying at his parents house to give my family some much needed space. My Boyfriend’s parents have it set up so that each night we take turns making dinner and last night it was Ben and I’s turn.
I’m not gonna lie, I was pretty nervous because his mom is an amazing cook so the pressure was on to make something everyone would love. So, like any girl trying to impress someone with dinner, I went to Pinterest to find just the right thing. Lucky for me, I found a super yummy recipe that was also really easy!
I decided to cook the Pineapple Chicken and Rice recipe and with only 11 ingredients, the longest part of the process was cooking the chicken breasts!
For ingredients, all you need is:
- 1 1/2 pounds boneless chicken breasts
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon vegetable oil
- 1 can of 20 oz. sliced pineapple (save the juice for the sauce)
- 1 tablespoon cornstarch
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 garlic cloves (minced)
- 4 servings of cooked rice
