I love pancakes! I mean, who doesn’t? But they can take so long to cook a whole batch. Having to put two in the pan at a time, cook a little, flip and then finish cooking. The process isn’t so bad, but wouldn’t it be great if there was a way to speed the process up?
I made these last night with my boyfriend and I don’t know if we’ll ever go back to making pancakes the “normal” way again.
We made the pancake mix like normal, but instead of pouring the mixture into a pan, we dumped it into muffin tins (filling it up about 3/4 full) then adding what we wanted in them on top. After about 12 minutes at 350 degrees, we had 16 pancake muffins!
Aside from being able to walk away from the oven and work on other things, we also got leftovers that we reheated this morning for breakfast!
